True Texas Smokehouse
Where October went, I do not know. A few weeks ago, I was running around the Upper Valley beaming because it was peak week! It was the best time of the year, at least for fall foliage, and my heart was the fullest it’s been in a while. Now, as the colors fade into stark silhouettes against somber skies, stick season is upon us, and I seek out comfort. For me, that comes in the form of food and walking around aimlessly. Fortunately my desire for comfort food and walking away my insanity, led me to the True Texas Smokehouse food trailer parked in front of Coventry Catering in Wilder, where I spoke to owner and operator Jeff Dunning about his journey into the world of making slow-smoked food on the move. -Isaac Lorton
True Texas Smokehouse
True Texas Smokehouse food trailer originated as Jeff’s Smoke Shack in a driveway along Route 5 in Wilder, VT. Jeff Dunning had set up smokers, a few fold-out tables, and a canopy tent overhead in front of the house he rented.
Jeff had been working at Fogg’s Hardware in Norwich when the pandemic hit, but with 27 years of experience in restaurants, he missed cooking for a living. And as a single father, he needed to provide for his two kids. So he took a smoking course online and began putting his experience towards doing what he enjoyed — making Texas style barbecue. Whether it was the sight or smell that stopped them, people began pulling over to see if the smoked meat was for sale. (Read More…)
